Esther’s Story

I have always had a passion for anything creative, and I find cooking to be an expression of my creative side. I started experimenting with fun, original recipes over 30 years ago. In fact, I don’t think I’ve ever made anything the same way twice! I was never any good at following recipes – I would much rather put in a little of this and a little of that, and guess what… it always tasted delicious! From nightly dinners to elaborate holiday meals, I’ve always found myself cooking alone and rather quickly. As a mother of four boys, it was very important to me to get a well-balanced meal on the table every night, but doing it in a speedy manner was just as important.

My friends were always asking me, “What did you make for dinner tonight?” I frequently found myself sharing my recipes – after all, sharing is caring! A great way to show your friends or family love, and even yourself for that matter, is with a nice home-cooked meal.

About 7 years ago, I came up with the idea for Min Dins. When I shared these recipes with my friends, they were always a big hit! I got so much joy when they would send me photos of their finished products. It really hit home for me when my best friend’s mother said to me, “I just love your eggplant dish – I make it all the time! Do you have any more of those quick recipes?” I was so touched that at 86, she was able to make and remember my recipe. When I told my husband what she said he replied, “it’s time to start Min Dins.”  The next day I bought all the ingredients, my husband picked up a camera,  and that, my friends, is how Min Dins was born!
