Here is our version of a quick and easy wedding soup you can throw together in under 3 minutes. By substituting the veal meatballs for cut up sausages, you save time without skimping  on flavor  Using the riced cauliflower instead of  acini de pepe  saves you calories and carbs,  a win win. So when  you are in the mood for a  nice hot soup, on a cold winter night, this high protein soup will hit the spot.

Directions

Step 1:  Cut all five sausages into bite size pieces.

Step 2:   Pour the whole carton of soup into your pot, and add half a bag of spinach as well as your cut up sausages.

Step 3:  While soup is warming  microwave your cauliflower in a microwave safe dish.  When it is ready remove any water if any and add to soup.

Step 4:  Heat till boiling.

Step 5: Enjoy!

Lentil Soup in under 4 minutes

 

Sometimes I come up with a recipe for a Whats in the Fridge Wednesday, or a Fun Tip Friday and it is so good, that I turn it into a Min Din. That is the case with this Lentil Soup Recipe.  It is quick, easy, low cal,delicious, and so cost friendly.  When you need to warm your tummy, on a cold winter night, this hearty soup is your go to recipe. ( I felt it needed some salt and pepper to taste so add to your bowl to your liking.)

Directions

Step 1:  Place the lentils in a large pot sprayed with a bit of olive oil spray.

Step 2:   Add the mushrooms to the lentils and start breaking the lentils and mushrooms up with a handy dandy chopping tool. ( See Top Pick Section for tool.)

Step 3:  Add the onions and give it all a good stir.

Step 4:  Pour in the entire box of the hearty vegetable soup.

Step 5:  Heat on m/h until soup is boiling.

Soycatash Soup Bowls

It’s “Souper” Bowl month!!!  This is the first of 4 soup recipes to warm your tummy on cold winter nights.  When I planed to do a whole month of soup recipes, I didn’t  know that February 4 is National Soup Day.  Since i don’t believe in coincidences,  I know this was divine intervention to bring you just what the Dr. ordered.  This soup only has 3 ingredients and can be prepared  in under 5 minutes.   Serve them up with some crusty french bread, or in a cute little soup bowl, no matter what you choose, I am sure you will enjoy.

Directions

Step 1:  Cut your sausage in bite size pieces.

Vegetable Pad Thai in under 5 minutes

Have you ever wanted to make a recipe, but getting it to taste just right was always a problem?  I find when recipes have too many ingredients, this can be an issue. If you love Pad Thai, but was never brave enough to try it at home, this is the recipe for you.  Not only is it super easy, it is super delicious, and a lower carb option for those of you that watch your intake.  By swapping out the traditional Pad Thai noodles for the butternut squash zoodles, you save the carbs, but don’t compromise on the taste.  So go ahead and try this with your favorite protein option, or use ours which is chicken.  All of the info on nutrition is based on serving this beauty up with chicken.

Directions

Step 1: Spray your pan with a little bit of Olive oil.

Step 2:  Brown your chicken tenders then remove to a plate.

Step 3:  Place your defrosted veggies, and spirals into the pan, use more olive oil spray as needed.

Step 4:  Add the sauce that comes with the vegetables, as well as a 1/4 c of the general tso sauce, and stir to coat all.

Step 5: Stir in 1 1/2 T of chunky peanut butter and make sure all is coated with the sauce. Put your meat back on top to heat through.

Directions

Step 1: Spray your pan with a little bit of Olive oil

Step 3:  Sprinkle with about half a pack of the taco seasoning

Step 4: Pour in the entire jar of the chunky salsa.

Step 5: Arrange a quarter bag of lettuce on each plate, along with a handful of the blue chips, and put a fourth of the pan on top of your lettuce and chips. If this serving is too much for you adjust to your liking and your calorie count will go down.

Fall Artisian Pizza

If you took a poll on favorite foods, pizza would probably be in the top three category!  It is one of those foods that you just can’t get enough of.  Everyone has their personal favorite, mine  is green olives and mushroom with tons of cheese . While doing my daily Trader Joe’s run, I came across a butternut squash crust, and Well the next is history  I hope you enjoy this little treasure of a dish.  Pizza is as creative as you are, the possibilities are endless!

Directions

Directions

Step 1: Spray your pan with a little bit of olive oil spray, and brown up  your turkey cutlets.

Step 2:  Turn over your cutlets and add the diced celery and onions directly from the container, on to your cutlets.

Step 3:  Place 1.5 C of stuffing mix into a bowl and run water on top and immediately drain so you are just wetting the stuffing, it should still be very firm.

Step 4: Place the moistened stuffing over the celery and onions, and then top with the cranberries.

Step 5: Pour the entire carton of the gravy over top and sprinkle with some herbs d’provence. Let simmer until all the cranberries pop and turkey is cooked through. ( about 6 min.)

Turkey Gyros

Who loves street meat raise their hand???? I bet all of you raised your hands! There is something so magical about the fresh taste of gyros you can get from a street vendor, now you can get the same wonderful taste in the comfort of your own home.  Our version is pretty healthy too, since you know exactly what is going into it.  The carb count on this one is a bit higher because of the naan bread, but the garlic naan is sooooo good it is worth every carb! If you want to omit the carbs try a whole leaf of romaine lettuce with onion, the turkey and the ranch dressing, and make a lettuce wrap.  Can’t wait for you to try this one.  I promise it will be a hit.

Turkey Tortilla Soup in under 5 Minutes

This soup could be one of my best recipes yet!  I know I say that every week, but this one really is special.  When I create a recipe, I think of things that would go well together.  When  I tested this one,  it was better than I could have possibly imagined. It was so good that I made it three days straight. It uses two cups of the pulled turkey from the crockpot recipe, leaving you with still enough turkey left for our final recipe pulled turkey recipe that the will bring you next Monday!!

Crock Pot Pulled Turkey

 

You know that addicting buffalo chicken recipe that is ever so popular at pot lucks? Well that is the recipe that inspired me to create this amazing recipe.  I wanted to end Crocktober with a Turkey dish, that would give you enough turkey meat to make a few days worth of meals.  By using two packages of Turkey Tenderloins you will get enough pulled turkey for our next two part series on pulled turkey!  I added some frozen cauliflower gnocchi when I prepared this.  You can mix it up by adding sweet potatoes , squash, green beams. really anything that you like will taste delicious in this sauce.  The zhoug gives it just enough spice, that will carry over nicely into our other upcoming recipes.   Turkey meat will last about 5 days in the fridge, so you may want to wait on this one till we post the next two recipes.

Step 1: Spray your crock pot with olive oil spray and set to H or L

Step 2: Place all 4 tenderloins in crock pot.

Step 3: Put entire cartoon of zhoug on top of the tenderloins.

Step 4:  Pour half the jar of ranch dressing on top and mix the two sauces.

Step 5:  Cook on high 6 hours, low 12 hours.  If you would like to add a side dish add the last hour on low , half hour on high.  I used a frozen bag of cauliflower gnocchi.  Note this recipe will make enough turkey for three different meals.

Step 6: Enjoy!
