3 Minute No Cook Mexican Pizza Recipe

I bet you would never believe that  you could make a pizza in under 3 minutes, with only 3 ingredients, without cooking it!  Well you can, and this video will prove it to you.  It is quick, easy, kid friendly, and yum.

Directions

Step 1:  Defrost your pizza crust completely before you use it.

Step 2:  Place the crust directly on the dish that comes with your microwave

Step 3:   With a slotted spoon use about 3T of fresh pico sauce from Trader Joe’s make sure that you are not getting too much liquid on the crust.

Step 4:  Sprinkle with shredded Mexican blend cheese and microwave for about 2 minutes or as long as it takes your microwave to melt the  cheese.  Let it set for a minute or two before you slice with a pizza cutter.

Fig Bowl Recipe

 

Bowls are all the craze.  Sometimes what you think is a healthy bowl, isn’t really that healthy.  They can be packed with more calories, than some people eat in a day.  This on the other hand is a very healthy bowl with under 200 calories.  Since the base is cauliflower rice, I added yummy toppings that will fill you up, yet not weigh you down.  This dish is just as good hot as it is cold, so if you are one to meal prep you can make four bowls and grab one to go with you.

Directions

Step 1:  Defrost your cauliflower rice in the microwave and fluff it a bit.

Step 2:  Spray a pan with a little bit of olive oil spray and put your onions into a fry pan that is set to m/h.  You want to take the bite out of the onions so they are not so strong, you don’t want to cook them all the way.

Step 3:   While you are cooking the onions it is a good time to chop up your figs. Add the diced figs and onions to the rice.

Step 4:  Stir in the bbq sauce, and top with some crumbled feta cheese.

Fish Tacodilla

What do you get when you mix a taco with a quesadilla?  A TACODILLA! Cooking at home gives you the power to exercise self control.  I don’t know about you but I can’t go to a Mexican restaurant and eat just 5 chips.  Once that bowl comes out it’s all over.  Then your meal comes… you’re not really hungry, but you ordered it, so you have to eat it, and it is so good that you finish it. I know you are shaking your head in agreement. So next time you are craving a good quesadilla, or a Taco, grab your laptop and cook a Tacodilla with me. ( This one is pretty large so it is meant for sharing)

Directions

Step 1:  Place a large tortilla in a fry pan that has been sprayed with olive oil.  (m/h setting)

Step 2:  Place 3 defrosted frozen fish sticks in the center of the tortilla. (they are fully cooked I like to defrost in my fridge over night)

Step 3:  Add some lettuce and shredded cheese

Step 4:  Cover the tortilla with the other half so it makes a half moon shape. ( shown in video)  cover pan with a lid and then spray the top before you flip over to cook the other side.  When you remove from the pan cut the serving in half to make two servings, and use the tarter sauce as a dipping sauce.

Fiesta Sausage Salad Recipe

 

Ever have one of  those nights that you don’t want to cook, because just the thought of bending down and taking out a fry pan is exhausting?  So you contemplate having a bowl of cereal or ordering a pizza?  This recipe will save you !  No mess, no fuss, no cooking!  That’s right you heard me NO cooking.  And, are you ready for the bonus…… this makes a great go to dish when you are asked to bring something to your next pot luck.  This is a take on the corn dip recipe that is so popular, except,  I turned it into a complete meal for you.

Directions

Step 1:  Cut up all the sausages into bite size pieces and microwave until warm. ( time will depend on your microwave 3 minutes works on mine.)

Step 2:  Empty a bag of fiesta corn into a bowl and microwave, add the sausage to the bowl.

Step 3:  Add the diced onion to the bowl, and a bunch of the fresh cilantro. ( The Trader Joe’s brand is pre washed in a package so it is ready to add, if you buy bulk from another grocer make sure to wash and dry)

Step 4:  Drain and rinse your black beans, and add to the salad.  Mix through.

Directions

Step 1:  Spray a pan with a little olive oil spray, over M/H heat cook the ground turkey.  Break it up with your handy, dandy, chopping tool while it browns.

Step 2: While your meat is cooking microwave the bag of fresh squash for a few minutes till soft.  I like to defrost my peas the night before in the fridge, so they cook up fast.

Step 3:   Add half the container of diced onions, half the bag of peas and the full bag of squash to the meat and continue to cook till meat is done.

Step 4:  Pour the bbq sauce on top and stir so that all is coated.

Step 5:  Cover with a lid and cook for a minute or so until done.

Step 6: Enjoy!

 

Falaco ( Falafel Taco Recipe)

 

 

What do you get when you mix a falafel and a taco?  A FELACO!!  Yes people I made this up.  Guess what it is great!  You get the great taste of a falafel with half the calories.  Not only will you save calories by switching out a spinach soft shell , for the pita bread, but I teach you how to make the falafels right in a fry pan without any oil.  This one is a winner, and a great rotation into your weekly dinner plan when you are looking for something different and fun.

Directions

Step 1:  Mix a 1/4 C of dry falafel mix with water stir and let sit for 15 to 30 minutes in the fridge.

Step 2: While you are waiting for the mix to set cut a small cucumber into a few chunks and put into a ninja to dice up in under a second. ( You can find info on the ninja on my website under top picks)

Step 3:   When the falafel mix is ready to fry up heat up a non stick fry pan on M/H heat and spray with some olive oil.  Make 3 little falafel patties and fry them in the fry pan, no oil needed the patties will be flat but will taste the same.  Turn when one side browns and keep spraying with olive oil as needed.

Step 4:  Place three in the center of your tortilla ( to save calories and carbs, you can always use half a tortilla as well.)

Step 5:  Top with  1T of diced onions, and as much cucumber as you like from the diced cucumber ( no calorie change so use as much as you like), as well as 2T of tzatziki  dip.

Step 6: Enjoy!

 

Indian Inspired Chicken Roll Ups Recipe

My husband and I have some dear friends in India.  They told me they look forward to watching Min Dins, each week!! Isn’t it wonderful the world we live in today?  Thanks to  YouTube, and other media outlets we can stay connected no matter the miles.  This dish is for our friends, who by the way, said if I make an Indian dish they would get me 10,000 subscribers, lol.  I am keeping my promise, now here is to getting to 10,000!!  When preparing this recipe, I love to use chicken tenders since they cook up so fast, and the shape is perfect for the roll up.  It is like having your own little street meat treat at home.  You know how  much I love Trader Joe’s diced onions , believe it or not I sliced up my own in this recipe because I wanted to keep the long thin shape of the onion slices.  By using half a piece of the naan bread you will cut your carbs in half.  Last tip is make sure you sprinkle with turmeric. Not only will this give your dish an authentic taste, and beautiful color, but your body will thank you.  Enjoy.

Directions

Step 1:  Spray a pan with a little olive oil spray, and start heating up your chicken breast tenders over M/H heat.

Step 2:  To save on time slice up half a yellow onion into long thin strips while your chicken breast are cooking.  When they brown make sure to flip and keep spraying with a little olive oil to keep them nice and coated.

Step 3:  Add the onion strips to cook until onions are soft.  Sprinkle with turmeric while the onions are cooking and stir to give all a beautiful yellow color.

Step 4:  Add the full jar of roasted peppers and the chutney and stir all.  Cover and cook until done.  Once done place 1/6 of the mixture on half of a naan and roll up.

Step 5:  Enjoy!

 

Cauliflower Rueben Recipe

Here is Min Din’s take on a Rueben sandwich.  Different yes!  Just as tasty?  You better believe it.  I skipped the bread on this one, and instead reached for some amazing frozen cauliflower patties from Trader Joe’s.  That isn’t the only swap I made.  Instead of corned beef we will be using turkey and instead of thousand island dressing we top it off with some Jalapeño sauce.  I know you have it in your fridge because we used it for our tuna tacos last week. So pretty much the only thing that is the same as a traditional Rueben is the sauerkraut, actually the one we use has pickles so I take that back.  This is supposed to serve 6, but I have to be honest I couldn’t stop at just one.  Yes, it is that good.

Directions

Step 1:  Spray a pan with a little olive oil spray and set your stove top to m/h place defrosted cauliflower patties all around the bottom of the fry pan.

Step 2:  Open the turkey breast package and using a knife cut up the turkey into chunks directly in the package so you have thick chunks that you will place over all the patties.  ( you will have a bit of turkey left over)

Step 3:  Add sauerkraut over the top of the turkey, and then pour 8T of the Jalapeño sauce over top

Step 4:  Top with the shredded cheese and cover the pan until all the cheese melts and everything is nice and hot.

Step 5:  Enjoy!

 

Tuna Taco Recipe

Directions

Step 1:  Defrost tuna burgers on your counter for an hour or in fridge overnight.  Place one in a fry pan that was sprayed with a little olive oil spray to begin to cook.

Step 2:  When the tuna burger is cooked on one side flip it over and spray a little more olive oil spray.  Add the sauces on top and cover with a lid to heat all up, and cook burger through. Take your spatula and cut the burger in half when it is fully cooked.

Step 3:  Place one half into a taco shell, the shape fits perfect with the shape of the shell.

Step 4:  Top with a little bit of shredded lettuce.

Trader Joe’s Quinoa Burgers Over Creamy Polenta

When you are looking for a great vegetarian recipe here is one you can make in a jiffy. For some reason I have the uncanny ability to walk through a grocery store, pick two random items, and know they will taste amazing together!  Why I have this talent?  I don’t know but I do,  so why not share it with you?  Now you have another great dinner idea, that you may never have thought of,  that you can throw together in a pinch.  Dinner is never boring, when you are constantly serving up a fresh idea. The fact that it took you under three minutes to prepare can be our little secret.

Directions

Step 1:  Place frozen polenta in a microwave safe dish and defrost, or if you know  you are making ahead of time, defrost overnight in your fridge.

Step 2:  Spray a pan with a little bit of olive oil spray and spread polenta all over bottom.  Set your stove on m so you don’t burn the polenta but you want it to get crunchy . ( The Trader Joe’s brand is what I use since there is spinach an all sorts of yummy’s in it) Place the quinoa burgers on top of the polenta.  Once again I like to have these already defrosted, so I put in the fridge the night before or let sit on my counter for a bit.

Step 3:  Put a half a slice of pepper jack cheese on top of each quinoa burger.

Step 4:  Place the lid on top of your pan and warm up all the ingredients.

Step 5:  Enjoy!
